I recommend Kauai or Maui. For Kauai I would stay in Poi Pu (less rain) and day trip from there. The beaches and golf in Kuaui are top notch as is the sightseeing and outdoor activities- night life is sparse. For Maui I would stay on the northwest coast Lahina/Kannapali/Kapalua area where most of the activity takes place.
