You can check out after three days if you want but you still have to pay for seven. I don't think anyone is going to post a sentinel at your door making sure you don't leave after three days.
If you only want to pay for three days' stay, why not put in an ad on a timeshare website saying you are looking to rent a unit for three days. Some owners with points packages might be able to put something together for you.
Or you could simply use VRBO/AirBNB.
